Microorganisms, active, invisible, and transformative are the starting point of this immersive dinner.
Fermentation is approached as a living system: something that circulates, shifts, accumulates, and gradually unfolds into new universes.

In this experience, Tavola Lazuli joins Momonimo to create a menu that treats time as material. Fermentation runs through each course while engaging in dialogue with an art installation by Elisabete Sousa and a soundscape by No Future.

Organisms intertwine, and maturation becomes an essential ingredient, expanding flavours, textures, and our perception of what surrounds us.
